Here in New England, I always reproduce these wild boar dishes with good old American pork.  For example, this homemade wide noodle pasta called "parpadelle" was made in my kitchen with ground pork.  It is my version of  wild boar ragu inspired by the previously shown traditional specialty from Tuscany.
