The Art of Cuisine

The Morsel

I love the concept of the morsel.  In Spanish we call morsels "tapas".  In Spain, for example, each bar delights in competing with each other in creating the most delicious and creative tiny delicacies to go with your glass of wine or beer.  In fact, one of my favorite activities during my young life living in Spain was going "tapa hopping" delighting in the creative culinary treats during our night out as is the Spanish tradition to do as a fun activity with family and friends. 

The greatest chefs are known to take inspiration from other cultural traditions.  Like that, here I combined the concept of a Spanish Tapa with the influence of Japanese maki, where I created a new form of Japanese tapa.   Japanese cuisine is usually very fresh and healthy.  I created this culinary art as a sushi morsel at home by cutting thinly sliced cucumbers and carrots for color with fresh Atlantic salmon from Maine and added avocado.  Finally I topped it with sriracha sauce and sesame seeds.
