I LOVE Japanese cuisine, especially Sushi!!!  Japanese cuisine is one of my personal cultural and culinary favorites.  Most sushi restaurants serve this dish called "The Volcano" with a mountain of warm scallops, shrimp, and rice in a warm Japanese mayonnaise sauce. And there is always a bowl of miso soup as a side. Learning to create sushi at home was on the top of my bucket list during the pandemic.  I wanted the full experience experiencing the same pleasure enjoying sushi at home as I do when I'm dining in my favorite sushi restaurants (as shown on right).
