Americans LOVE "meatloaf"!!!  However, since we are in the latin section this Art of Cuisine, I'm ending this Mexican segment with a latin style meatloaf.  This latin version includes pork, with boiled eggs, with garlic, onions, salt and pepper and wrapped with bacon. I created this latin inspired meal as a nod to my latin family.  This "latin" meal could just as easily been created in the latin countries of Europe, such as Italy, France and Spain...  A lot of love and creativity went into this meal I created at home in my kitchen.  The culinary arts only reaffirm that great chefs are artists because they never forget the value of embracing creativity, love,  and play in their work.  I hope this important message is as inspirational and meaningful to you as it is to me in my life. Now it is time to visit one of my favorite cuisines from Boston's Chinatown.
