Like most catholics in Spain, I loved making this simple classic Spanish artisan bread in my own kitchen with a simple cross design. It is so simple yet romantic, elegant and beautiful.  Because I used an ancient sourdough starter from Europe, this artisan loaf could just as easily be found in any artisan bakery in Tuscany. Now lets review the art of scoring bread.
