The "Taquito"

Beef Taquito on Corn Tortilla

A Taqueria is a Mexican establishment that makes tacos.  Usually they are made with corn tortillas and beef, or chicken, but along the Mexican seacoast taquerias also make taquitos with fresh local catches of  fish brought in from the local fishermen. Taquitos are usually small, smaller than mine.  So they are usually served by the half dozen or dozen.  This one I made at home was made with a steaming hot corn tortilla and marinated beef tips and topped with shredded cabbage, jalapeño peppers, and cilantro.  Lime juice brings it all together!  So just before you take a bite, you always squirt some lime juice on top as a shock to the palate.  Taquitos are a regular choice for cookouts, celebrations, and birthday parties.
