The sun is an important icon of the Mexican people.  So the design of my version of this classic Mexican seafood dish pays homage to one of Mexico's most iconic symbols.  This fresh shrimp comes straight from the Atlantic.   I had a lot of  fun using classic Mexican ingredients such as corn to create the design of the sun.  The green of the avocados and the red of the tomatoes also represent the colors of the Mexican flag.
