Caterpillar Varieties
Before turning into butterflies my Japanese caterpillars began their transformation into works of art by being stuffed with salmon, carrots, and cucumbers and served on a bed of smooth and finely polished Japanese wood. As you can see, I create my caterpillars with a sheet of Japanese dried seaweed called Nori. Here they are filled with rice, fresh Atlantic salmon, and finely shredded fresh vegetables. Then I make the nori into sushi roll and cut it with a sushi knife into slices. I present the caterpillar flat and full of colors on my plate as culinary art.
