The Art of Cuisine

The Burrito

Beef  in Flour Tortilla

Before we move on to our next category of my favorite cuisines, I can't leave Mexican cuisine without including at least one homemade version of a Mexican burrito.  American burritos usually come with beans and rice.  But basically a burrito is a large corn or flour tortilla filled with many possible ingredients depending on your preference.

We will have plenty of rice dishes coming up, so this is a simplified burrito with just steak and vegetables.  First I cooked the steak on the grill and then added the habanero peppers to the grilled steak along with scallions and a few squirts of Mexican hot sauce, all on a flour tortilla.

For visual appeal, I kept it simple on a white plate to bring out the bright colors of fresh ingredients in orange, red, and green like is so commonly seen in the cultures and cuisines of Mexico and Latin America.
