After Dim Sum, I also love ordering these Chinese egg custard pies with their perfect ridges of toasted pie crust. I love the color that the eggs in the soft custard center create contrasted with the crunchiness of the ridged edges of the crust on the palate with each bite. The restaurants in Chinatown always serve them to you warm. Yum!
