Homemade Pork Fried Rice
The Chinese Wok!

Rice is in the DNA of Chinese cuisine, so I'm starting with my version of Pork Fried Rice. I find the Chinese Wok essential to making authentic Chinese dishes.  While cooking in a wok, the heat concentrates at the center. Making Chinese rice comes in two steps.  First white rice is made and then stored in the fridge for 24 hours.  Once the rice is hard and solidified, it can then be cooked in a wok, which gives it that authentic texture that we enjoy in Chinese restaurants. 

     As you can see, I kept my version of Pork Fried Rice simple yet "classic" with generous slices of sautéed pork before then constantly stirring the rice with minced carrots and egg, and then finally adding peas and bamboo shoots and fresh bok choy.
