As every fisherman knows, prior to any cooking can begin, cleaning the fish is priority number one. So after my daily catch was cleaned, on this day I cooked this pair of fish with the head and in the culinary art style of the Amalfi Coast. Every great seafood chef knows the head of the fish is full of delicious flavor, and fish heads are often used by chefs to make stocks for seafood soups. In some parts of the world, the head is a sign that the fish is fresh.
Here, my cleaned fish was cooked with herbs, lemons, and fresh lemon juice. It was so exquisite, so fresh, and so delicious!!!
