The Art of Cuisine
Menudo
A Traditional Mexican Dish
Menudo is traditional Mexican dish, but because it is so delicious it is also universally loved by many cultures. This is the kind of country dish that a cuisine connoisseur like chef Anthony Bourdain would LOVE because it is has honest, old world, down to earth ingredients like pork, including pork feet, tripe, and hominy. It is served in a delicious broth that is all cooked for hours as everyone plans a scheme to find a reason to coincidentally drop by to taste.
Once it is cooked it somehow makes people come visit who you haven't seen in ages... Fortunately, a large pot of it is always made so there is always enough for extended friends and family to get at least a bowl or two. Once menudo makes it way to your plate, it is served with chopped onion, oregano, and squeezed lemon juice. Many cultures have their own version of this dish. So this latin dish a truly a food connoisseur's favorite. I've even found similar dishes while travelling in Italy. Because of all the love, time, and commitment that goes into this dish, it is often served at Latin on special occasions. It was definitely a special occosion when I received this dish via express mail from my mother....
