The Roman Version
A Traditional Roman Dish
This traditional Roman dish is also similar to menudo. This traditional Roman tripe dish keeps being served to me as a side dish with meat, especially in Rome, Firenze, and through out the small villages of Tuscany. In Florence, for example, I always have it served to me with my Steak Florentine. In Italy "naturally" this dish is usually served with a tomato sauce and topped with grated Romano cheese. In fact, this dish is so popular through out Italy that it is often served at special occasion, such as weddings. Each area of Italy has its own version of this tripe dish that I like to call "Italian Menudo". As you can see, I even added pasta and Romano cheese to this traditional Roman dish I made at home.
