Andalusian Molette

The molette is a very soft Spanish bread that comes from Antequera in Andalusia, which is in southern Spain.  Traditionally it is served as a breakfast bread.  Much like Italy, olive oil is a national treasure in Spain.  Like Italians, Andalusians also love to drizzle extra virgin olive oil over the bread and and serve it with tomatoes, other vegetables, or cheeses.  When it is served warm, I think it is especially delicious!
