Galicia is in the northwest of Spain, the historic region of the heroic legend of "El Cid".  Like many artisan breads, Pan Gallego has a soft interior with a hard outer crust, depending on the baker.  Over my years in Spain, I never never met a Spanish bread I didn't love!
