Spain is actually a very diverse country.  Most people don't know that there are several languages spoken in Spain: Castellano (Spanish from Castile where I lived as a student), Gallego (from Galicia in the northwest of Spain), Catalan (from Cataluña along the eastern border), and Basco (from Basque country in the north near France).  And then there is "Andaluz, which is a Spanish dialect used in Southern Spain.  Each region brings its own culture and exquisite cuisines.  But to keep it short and simple, I will only focus on a couple of Spain's national dishes, such as the Spanish Tortilla and Paella.  Artisan bread is also an important staple of Spanish cuisine, so I will also give a few examples of Spanish artisan breads.
