This rice and pork dish is one of my House Specialties.

Like in Mexican cuisine, rice is also an essential ingredient for many Spanish dishes, especially Paella.  The Spanish people love their meats with rice and vegetables, such as my roast pork meal shown on the right.  This hearty pork dish represents a typical Spanish family meal.  This colorful pork and rice dish could be something that one would eat in the Spanish countryside. 

 

Even though the vibrant green of the peas is something associated with a Spanish paella, this dish is also in the Italian Tuscan tradition of roasted wild boar, and one would find this in the Tuscan villages we visited earlier.

It's interesting that many Mexican, Spanish, and Italian dishes have many things in common.  Their dishes are usually hearty, robust, rich with flavor, and, of course, very generous just like the people.
