The Classic Spanish Tortilla

Like the Paella, the Spanish tortilla is also a national dish in Spain.  Having lived in Spain during my early life, I must have eaten at least a thousand Spanish tortillas in my life! 

 

Many people confuse the Spanish tortilla with the Italian frittata.  However, the Spanish tortilla is not the same.  While they may appear a little similar, the taste and preparation is very different.  There are many variations to be sure, however in general the Spanish tortilla is more like a refined potato pie that is cooked on the stovetop where the egg is a secondary ingredient to the potatoes.
