Mexicans tortillas can be eaten in many ways.  This simple yet spicy breakfast is one like you would find in a traditional Mexican  home.  Here the tortilla serves as bed for this breakfast.  Tortillas are more commonly torn into fourths and used to scoop up  the meal.  As the tortilla is essentially a form of bread, it is a very "Latin thing" to use the tortilla to wipe the plate clean, much like the Spanish and the Italians do with bread after a meal to delight the senses of the palate again with the food and flavors of the meal.
