Here is another version of a Spanish tortilla with hot chili peppers and scallions that I also created in my kitchen.  Notice the height and the stacked potatoes.  As mentioned earlier, the Spanish tortilla is essentially a potato pie. 

 

This is a wonderful dish that I prefer to serve warm straight out of the pan with a side of Italian aioli (a freshly made mayonnaise made with extra virgin olive oil and fresh minced garlic).  Spanish tortillas are also delicious when served at room temperature, and many people prefer it that way.
