Florence in history was a financial capitol of Italy and of Europe, and the city accumulated great wealth and power to compete with Rome.  As you can see, this traditional Steak Florentine, or Bistecca Fiorentina in Italian, that they served me was not only MASSIVE but also had bold flavors, dry rubbed with rosemary before grilling.  Needless to say, it was as delicious as it was BOLD.  So it's no wonder that when the people of Firenze create culinary art their motto seems to be:

 "Go BIG or go home!"
